More and more people are embracing a plant-based lifestyle. In Germany alone, over one million individuals now live vegan – a shift we at Boller-Klonek Winery recognized early on.

Back in 2011, we began experimenting with producing wine entirely without animal-based fining agents. Since the 2012 vintage, we’ve been crafting exclusively vegan wines – driven by conviction and a deep sense of responsibility for nature, animals, and people.

Our philosophy: enjoyment and sustainability go hand in hand. That’s why we focus on transparent production methods, gentle processing, and uncompromising quality – all without the use of animal products.

Location & Origin – Rheinhessen in Pure Form

 

 

Our traditional family-run winery is located in Stadecken-Elsheim, nestled in the idyllic Selz Valley in the heart of Rheinhessen – between Mainz, Bingen, and Alzey. Our vines thrive in some of the region’s finest vineyards, such as:

 

  • Stadecker Spitzberg

  • Stadecker Lenchen

  • Elsheimer Bockstein

  • Engelstadter Adelpfad

  • Essenheimer Teufelspfad

  • Jugenheimer Hasensprung

 

On around 15 hectares of vineyard land, we cultivate our diverse grape varieties with passion and precision – in harmony with nature.


 

What Makes Our Wine Truly Vegan?

 

 

After the grapes are pressed, the fresh must is initially cloudy. In conventional winemaking, animal-based substances such as gelatin, egg whites, or isinglass (from fish) are often used for clarification.

We completely avoid animal-derived fining agents. Instead, we use plant-based or mineral alternatives (e.g. pea protein, bentonite) that reliably bind the sediment. These settle at the bottom, allowing the clear must to be gently drawn off – entirely free of animal residues.

The result: pure, harmonious, and vegan wines – authentic, unadulterated, and close to nature.

This image shows the result of successful pre-clarification of freshly pressed juice.

The measuring cylinder on the left contains our Rosé, while the one on the right holds our Pinot Gris. In the upper section of each cylinder, you can clearly see the bright must. The fine lees bind with our plant-based fining agent and settle into a compact deposit at the bottom of the glass – just as they do in the tank.

We then carefully draw off the clear must above the deposit, before it undergoes alcoholic fermentation to become wine.
